Happy Friday darlings!
The temperamental weather this week has been making me crave baked goods. Yes, it is a very specific category of craving – an item that has been baked recently and preferably by yourself!
I love cooking and baking, so decided I would share with you one of my favourite loafs to make. Banana bread! This is such a simple and special recipe, and is great to make over the weekend when you have over ripe bananas left from the week.
I like to eat mine hot out the tin or the next day with my tea, toasted with a little bit of butter #drool.
My favourite banana bread recipe:
100g unsalted butter
1 cup sugar
2 free range eggs
Dash of vanilla extract
3 mashed ripe bananas
2 cups plain flour
2.5ml baking powder
Pinch of salt
5ml Bicarbonate of soda
¾ Cup of plain milk
Place wax paper in a standard 20cm loaf tin.
Cream together the butter, sugar, eggs and vanilla.
Add in your mashed bananas.
Mix in the sifted flour, baking powder and pinch of salt.
Add the milk mixed with bicarb.
Fold well with a spatula.
Bake for 45 minutes at 200 degrees and voila!
