Happy FriYAY darlings. I had a hectic week and am looking forward to some R&R this weekend.
In my Protein Shake post I mentioned how I have 2 breakfasts a day #piggy. The first is my protein shake and second is a more traditional brekkie at 10:00am which holds me over to lunch.
My current favourite is overnight oats! The great thing about this breakfast, is you can prep the whole thing the night before – then just pop it in your lunch box the next day. I am all about quick and convenient! Ain’t nobody got time to wonder around a dark kitchen making breakfast before work.
You can really mix up the ingredients putting anything you like in, the below recipe is a great base to work from:
PB & Blueberry overnight oats
2 cups plain rolled oats
1 tablespoon flax seed (Or any seeds, I also like chia)
2 cups almond milk (You can also use soya. I don’t recommend cow’s milk)
1 cup frozen blueberries (Any fruit, banana works great with this recipe to)
2 tablespoons low sodium peanut butter
1 tablespoon honey
Place oats at the bottom of a jar. My mom in law found these fab ones, I adore them!
Sprinkle over flaxseeds.
Pour over milk.
Place peanut butter and honey on top.
Pop your fruit on.
All done! You can now refrigerate overnight.
The next morning eat straight from the jar or microwave first for 30-60 seconds.
Breakfast is served!
