Happy Friday lovelies.
As per my post on Monday I promised you a delicious soup recipe! Here is a tasty clear vegetarian soup packed with goodness. Not only is it hearty and filling, but it is healthy to! I like to make a pot of this on a Sunday evening and then portion and freeze it for the week ahead.
Clear vegetable soup
1/2 tsp oil
1 tsp thinly chopped ginger
3 cloves thinly slices garlic
3 tbsp finely chopped onion
2 finely chopped spring onion (white part)
2 finely chopped spring onion (green part)
2 cups chopped finely mixed vegetables (carrots, beans, cauliflower and sweet corn) chopped finely
Salt and pepper
4 to 5 cups of water
2 tsp corn flour – mixed with some water.
Heat oil in a sauce pan, add in ginger, garlic, onion, spring onion white part and sauté for 5 minutes.
Add in veggies and sauté for another 5 mins or until soft and colouring.
Add in water, and cook for 10 minutes.
Add in salt, pepper and cornflour water and mix well. This will thicken the soup.
Add in spring onion and mix well.
This recipe is a great starting base, you can spice it up or add a protein to it. For my readers in warm countries you can even have it chilled! If you feel like you need something more sustainable, serve with a slice of wholemeal bread.
